Peaches & Cream Shortcakes

*I haven't made these yet, but am so excited to!

Shortcakes:

2 cup flour

2 1/2 tsp bak powder

2 Tb sugar

1/2 tsp salt

1/4 tsp nutmeg

1/2 cup cold unsalted butter, cut in bits

1/2 cup cnned sweet potato puree

2/3 cup + 2 Tb heavy whipping cream

Fill with cream and peaches

350degrees, baking sheet lined with parchment paper or nonstick foil, 30 minutes or until golden brown

mix flour, bp, sugar, salt, nutmeg. add butter - cut in with a pastry blender until coarse crumbs form. add sweet puree, then pour 2/3 cup cream over top. stir with fork until a soft dough forms.

knead gently 1 or 2 times on floured surface. roll out dough to 3/4 in thick. cut 12 rounds. 2 inches apart on baking sheet

brush tops with 2 Tb cream, dust with sugar
