Canning Equipment for Raw Pack Method
- Jars - mason jars, clean, no chips or cracks – check each time before use
- Lids - not older than a year, washed in soapy, warm water
- Pan of hot water - simmering water to keep lids hot
- Rings - clean and dry (discard if too rusty or bent)
- Canner - fill with appropriate amount of water (add abt. 1 tsp cream of tartar to keep canner from getting mineral stains) turn heat to medium (turn to high after jars are added and lid is locked in place)
- Wet clean cloth - to wipe rims of jar after filling
- Jar lifter - to transfer hot jars (optional)
- Jar funnel - keeps jar rim clean when filling (optional)
- Dry dish cloths - to set jars on while preparing and after removing from canner
Additional items needed for canning beans:
- Boiling water
- Measuring cup or ladle for adding liquid
- Butter knife or metal spatula - to remove air pockets
