RECENT RECIPE ADDITIONS:

Caramelized Salmon with Savory Mango Salsa & Cilantro Rice

2 Servings

Cilantro Rice:
(this amount of rice is probably too much for 2 servings)
1 cup rice
2 cups water
1 tablespoon butter
1 teaspoon salt
2 tablespoons lime juice
2-4 tablespoons chopped fresh cilantro



Savory Mango Salsa:
1 mango, peeled, seeded and diced
1 1/2 Tbsp finely chopped red onion (i don't know what to do with the leftover onion!!)
1/4 medium green bell pepper, diced
1 medium Roma tomato, diced
1/2 jalapeno pepper, cored, seeded, and diced

juice of 1/2 lime
1/8 cup tablespoons chopped fresh cilantro (i actually used half of this amount... but i might try more next time?)
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper



Caramelized Salmon:
2 tablespoons extra virgin olive oil
1/4 cup sugar
3/4 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 salmon fillets (6 oz each)



1. Place the rice ingredients in the pan of a rice cooker and start.
2. Meanwhile, mix the salsa ingredients in a small bowl and set aside for the flavors to blend.
3. Measure the vegetable oil in a large non-stick skillet; turn the heat to medium.
4. Mix the sugar, salt, and pepper on a large plate; dip the salmon on all sides in the mixture. (make a mix)
5. Place the salmon in the heated skillet and cook until the salmon is caramelized on the underside.
6. Turn and cook until the other side is caramelized and the salmon is cooked through. The time will depend on how thick the pieces are. Do not overcook.
7. To serve, place a bed of rice on each of six serving plates, top with a piece of salmon. Scoop a spoonful of salsa over the salmon. Serve with additional mango salsa and Thai sweet chili sauce.


Note: Sugar snap peas go well with this dish; place enough for the meal in the steaming basket of the rice cooker and put them in the last 10 minutes of cooking.

so this was a fun dish. probably not one that will happen often. too much chopping. but it was good and i'll probably do it again.

Hurray! I wondered when you might try this one... it does look good, and does look like a lot more work.... is it special enough for a special occasion-type dinner?

um yeah, i think it would be good for a date night type of dinner. i want to try it with snap peas next time...

so i made this without the mango salsa. a lot less work and still so yummy with just rice. i think i'll make the mango salsa for fancy dinners, but on a regular basis, i'll just make the plain salmon.
