RECENT RECIPE ADDITIONS:
Whole Wheat Bread Experiment
(not my picture)
For 2 Loaves
Mix all ingredients together in mixer and let mixer knead dough for a few minutes...
2 1/2 c warm water
2 T instant yeast (stir into flour first)
1/2 c honey (or brown sugar)
5 1/2 c wheat flour
1/2 c wheat gluten (found at walmart)
2 tsp salt
1/4 c powdered milk
2 T butter
1/2 c potato flakes (optional)
2 Tbs vinegar (or dough enhancer - found at walmart)
Let rest 10 - 15 min
Form into loaves and place in pans
Let rise until double in size
Bake 350 for 30 Minutes (45 minutes for Becca)

omitted potato flakes
used 6 cups flour
divided into 3 loaves, not 2
experiment #1 report:
Becca doesn't think it is as dense... it was a lighter loaf... it raised about the same as when it was just 2 loaves. So it was able to rise to its full capacity without falling... but it came close... one loaf looked a little fallen... sort of flat and not smooth as the others. I let it raise for about 45 min in proofing oven with damp towel covering. The texture is still very good and would make a pb&j really well.
Oh and for the alternate ingredients... I used
brown sugar and dough enhancer (not the vinegar)
i like doing the potato flakes in mine. maybe it's moister? i don't know. but i have to keep my bread in the oven for 45 minutes for it to not be doughy...
