RECENT RECIPE ADDITIONS:

Beans & Rice

1 pint pinto beans (heat and add spices - pepper, onion powder, red pepper flakes, etc)
1 cup rice
i like ketchup!

don't forget veggies on the side

From Scratch (Crockpot method):
1 1/3 c. of dry beans make 1 quart cooked beans. If you have a hambone, subtract 1 qt of beans from the size of the crockpot. (For example: For a 5 quart crockpot, you can cook 5 qts of beans or 4 qts of beans with a hambone.)

Soak beans overnight. Drain. Put hambone in crockpot (optional). Put in beans. Put enough water to cover beans. Add dried onion. (~1/4 c. for full crockpot) Cook on high until tender then turn to low or warm.

Add salt and pepper. 1 tsp per quart of beans or with a hambone add less (maybe 1/2 tsp per quart or so).

Once beans are tender, spread them out on a cookie sheet. Take the hambone out. Find any bits of gristle or fat to take out and break up pieces of ham. Return to crockpot to keep warm until serving.

tip: If you run low on water or want the beans soupier only add boiling water not cold water.

Leftovers can be frozen in freezer baggies laid flat or in tupperware containers.

Carrie’s Instapot notes:
1 ham bone
4 c. Dried pinto beans (try 6c.)
8 c. Water (use 12 c. For 6 c. Beans)
Dried onions
1 cube vegetable bullion (try 1 cube per 2 cups beans)

Pressure for 50 min (try 55 min next time)
Natural release for 10 min.

Add less salt if using bullion.
