I found this on a blog. Mike loves meatloaf and I don't love meatloaf... so I'm always trying to find new recipes that will make me like it a little more. This one definitely did. And Mike really liked it too.
Serves 4 (or 3 if we're hungry)
Loaves:
1 lb ground beef
1/2 cup oats
1/2 tsp salt
1/2 cup grated cheddar cheese
1 egg (or powdered egg)
1/4 cup milk (or 1/4 cup water + 2 1/4 tsp pwd milk)
2 Tbsp onion (chopped)
Combine all ingredients well. Shape into 4 mini meatloaves, packing together tightly. Place in greased, shallow baking dish.
Sauce:
1 Tbsp brown sugar
1 Tbsp mustard
1/3 cup ketchup
Cover loaves with sauce (make more if you really like it).
Bake at 350 degrees for 35 minutes

8 loaves
350 degrees 40 minutes
