RECENT RECIPE ADDITIONS:

Italian Sausage Risotto with Cajun Shrimp

How is THAT for a title?  I made up a recipe and we had it for dinner... so thought I would share (Mom)
1/2 med onion chopped
1 celery rib diced
2 T. olive oil (or veg)

Saute' in oil then remove from skillet when translucent

1/2 # sliced italian sausage

Cook sausage slices in skillet until nicely browned.  Add sauteed veggies back into skillet.  Then add the following:

1 16oz can of tomatoes, blended
1 cup chicken broth (1 tsp bouillon in water)
3 bay leaves
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp cayenne pepper
1/2 # cooked or raw shrimp (if raw, add after mixture returns to a boil)
*salt if needed (if sausage is salty enough it may not need extra salting)

Serve over rice when shrimp is cooked and mixture is steamy hot.

Oh, yeah... forgot to say... it was HOT!! so for for any little kiddos or delicate mouths... cut back on the peppers.... he he he

k, but its called "risotto" but you used rice. i want risotto! but i can't find it at the store!! let me know if you ever do.

Details, details... risotto IS rice... just italian, but you knew that. I don't know what makes theirs different... dad didn't think it was.

isn't risotto pasta that's shaped like rice? thats a little different...

nope! Risotto is rice, or else your father has mislead me all these years.... the stuffed rice balls are called ".... stuffed risotto" but all italian

Lucky for you guys I just had a friend make risotto. She said you use arborio rice. It is rice but as you cook it you add water rather than regular rice where you put it all in at the beginning. At least that's what Rachel Ray does. Oh and my friend found arborio rice at frys.

Aha!!! Now that solves the mystery! Thanks, Carrie. I will need to try to make the rice balls for dad again... I think risotto is stickier.... so can you tell if it is really a rice grain or if it is a pasta?
