RECENT RECIPE ADDITIONS:

No-Cook Muesli

1 cup plain nonfat yogurt
1 cup quick oats
1/2 cup whole nuts, such as almonds, walnuts, or pecans
1 tablespoon flaxseed meal (optional)
1 tablespoon maple syrup or honey
1 cup fresh berries


In a blender, combine the yogurt, oats, nuts, flaxseed meal, and maple syrup or honey.


Blend until the oats and nuts are in small pieces (about 30 seconds), then divide the muesli among three bowls and top with the berries. Or blend 1/2 cup of berries with the muesli and garnish with the rest.


Carrie: "we tried it with vanilla yogurt and no sweetener (because all flavored yogurts HAVE sweetener) and we did chopped strawberries and bananas on top.  mmmm... it was yummy. a little thick for my blender, but my yogurt might have been extra thick. i'll let you know when i try it with the plain yogurt. also, the kids would rather not have chunks of fruit, so next time i'm going to blend in the fruit too so that its just flavored oatmeal."

k, so i made this again but i cut the recipe in half, had plain yogurt and honey as it calls for, and did it in my mini food processor (that's attached to my stick blender... pretty powerful.) it worked GREAT! it wasn't too thick to blend up at all. i think my blender just might not be that great. i cut back the nuts a bit. the pecans were a little too strong of a flavor. (i haven't tried walnuts yet.) AND i put the fruit in the blender with everything else - it. was. awesome. the kids ate it WAY better and could pick their flavor. we did strawberry and strawberry banana(my fave so far). i was going to make dave a peach one but he tasted the strawberry one and wasn't a fan! i was so bummed. :( so me and the kids will eat it on his work mornings i guess.

is this something you can prepare ahead? like have it sit in the fridge... or does it get soggy?
