Sweet Potato Pancakes for Babies
Mix:
1/2 cup cooked sweet potatoes
2 egg yolks
Add:
1/3 cup flour
1/2 tsp baking powder
I like to add cinnamon
Add:
1/3 cup milk
This is a super small batch. I usually double it and make tiny pancakes and freeze them. Then I grab a couple when we're leaving somewhere, thaw them on the dash of the car, and then feed him pieces while I'm walking around the store or whatever.
