2 - chocolate cake mixes - best if mixes have pudding in them (used Betty Crocker Super Moist - Triple Chocolate Fudge)
1 - family size brownie mix (used Pillsbury 13 X 9 Family Size - Chocolate Fudge)
3/4 cup vegetable or canola oil
3 eggs
3/4 cup water
3 boxes (28 count) Andes mints (Walmart sells bags of Andes mints, not boxes. Kristi used 1 1/2 bags of mints. Each bag is about $2.)
Using your electric mixer combine all ingredients using medium speed. "Dough" is not like traditional cookie dough - super sticky. (Kristi used parchment paper) Drop onto cookie sheet (used a cookie scoop that is1 1/4 - 1 1/2 inches across the front) and bake at 350 degrees for 13-15 minutes ( For a soft cookie - 12 minutes). When cookies come out of the oven immediately lay 1 Andes mint on each cookie. Allow cookie to cool on baking sheet and mint to melt about a minute. The cookies want to stick to the baking pan, so transfer cookies to wire rack using a heavy metal spatula. Spread melted mint over top of cookie. Allow cookies to completely cool and chocolate to set up again before stacking (I put foil on my table and let them set up there so I can use my rack for the hot cookies.)
6 to 7 dozen cookies, depending on size.
